Vegan Pizzas

One of the best things about having a vegan lifestyle is showing our family and friends that we can still eat pizzas, burgers and typical non-vegan meals - just with a healthy vegan twist. 

Today I'm sharing with you how I make my pizza - packed with mushrooms, refried black beans, sweet potato, cashew cheese and of course avocado! Kinda like having Mexican on a pizza!

Vegan Pizzas

*use organic ingredients where possible for your health and the environment


3 gluten-free vegan pizza bases
250g (8.8oz) tomato paste
2 cups spinach
3 cups white button mushrooms, chopped
1 red onion, chopped
Refried black beans (see recipe below)
2-3 orange kumara (sweet potato), sliced
1 cup corn (fresh or frozen)
Cashew cheese (see recipe below)
Fresh basil and oregano
2 ripe avocados


Refried Black Bean Ingredients:

1/2 red onion, chopped
2-3 garlic cloves, crushed
1/2 teaspoon vegetable bouillon/stock powder
1 teaspoon cumin
1/4-1/2 cup water
2x 400g (14oz) tins black beans, drained and rinsed well
Chilli powder
Cracked pepper


Cashew Cheese Ingredients:

3/4-1 cup cashew nuts, presoaked
1 large garlic clove or garlic powder
Juice from a lemon
1-3 tablespoons nutritional yeast
1/4 teaspoon cracked pepper
1 teaspoon wholegrain mustard
1 teaspoon apple cider vinegar
1/2 cup water



Preheat oven to 190 degrees celsius (375F).

To make the refried black beans, fry onion and garlic in a pan with a few tablespoons of water. Cook for five minutes. Then add cumin, vegetable bouillon/powder, half the amount of water and one tin of black beans. Cook for a few minutes until soft and then mash with a potato masher until thick. Finally, add the remaining water and black beans. Cook for another five minutes and mash until combined. Add more water if the black beans are too dry or cook longer if black beans are too watery. Season with cracked black pepper and chilli powder as desired. 

To make cashew cheese, blend all cheese ingredients in the Optimum or high-speed blender until thick and creamy.

Cook in the oven for 12 minutes or according to your pizza base instructions. 

Garnish with fresh basil, oregano and sliced avocado.
