Vegan Fried Rice

This is the perfect recipe for when your husband is about to come home and you haven't thought about dinner - well for me anyways! After you've cooked the rice, this vegan fried rice won't take you any longer than 15 minutes to make. Make it and thank me later. 


Vegan Fried Rice

For your health and the environments, use organic ingredients where you can! 


3 cups cooked rice (basmati or jasmine) - I use brown basmati rice
2 carrots
2-4 zucchini
1 head of broccoli and its stalk
1.5 cups corn, fresh or frozen
3/4 cup frozen peas
2 cloves garlic
1 small red onion
1/2 pineapple, cut into small pieces
Bell pepper, cut into small pieces
3 spring onions
2-3 handfuls cilantro
3 cups baby spinach
1/2 teaspoon turmeric or more
2-4 Tbsp organic tamari sauce
2 or 3 avocados



Chop all vegetables into small cubes - including broccoli stalk.

In a wok, fry the red onion and garlic in 4 Tbsp water. Add carrots and zucchini fry for 2 min. Add a little bit of water as you go to keep it from sticking. Then add corn, peas, broccoli, bell pepper and continue to fry for a few more minutes. Lastly, add rice, pineapple, spinach, turmeric, tamari sauce and mix through. This dish is the best when all the vegetables are half cooked and crunchy!

Serve with spring onions, cilantro, lemon and top with avocado for some healthy fats. Or add some crunchy tofu - my husband likes to sprinkle my healthy baked tofu on top!
