Healthy Baked Tofu

Let's just say I've never been a fan of tofu until now!

The key to making the best tasting tofu is all in the way you cook it! As many of you might know, I don't cook or consume oil so to try and master that crisp took a little experimenting. I usually bake potato chips in the oven with a tray of water to make them crunchy so I did the same with the tofu and it worked out perfectly. 

I've only just started eating tofu in my diet for a few reasons.

1. Before last week, it tasted like cardboard. 

2. Dan likes it. 

3. Beth likes it. I've been trying to experiment with toddler-friendly meals and tofu is a winner!

I'm not big on the idea of eating a lot of soy, but it's a nice alternative to eating beans or lentils - which we eat a lot of and can get boring at times. 


What I love about the toppings of this Healthy Baked Tofu is they are all super good for your body. Turmeric is an incredible anti inflammatory especially when paired with cracked black pepper (it's nutrients become more bioavailable). This recipe also calls for oregano, which is my favourite herb. Healthy Baked Tofu

Ingredients:

1 packet non-GMO organic tofu (make sure it's organic!)
1 teaspoon paprika or smoked paprika
1 teaspoon oregano
1 teaspoon curry powder
1 tablespoon nutritional yeast - optional
Small shake of herb salt (I use Ceres Organics herb salt) or of Himaylan salt - optional 

 

Method: 

Heat oven to 170 degrees celsius/ 340 Fahrenheit on a fan bake setting. 

Mix spices, oregano and nutritional yeast (if using) in a bowl with a fork.

Rinse and chop tofu into small cubes or whatever size you fancy and add to the bowl. Gently mix tofu with the spice mix. Alternatively, you can put a plate on top of the bowl and give the tofu a shake around. 

Put tofu on a lined baking tray and put into the oven. Get another deep dish baking tray and fill 1/4 of it with cold water. Put this tray of water into the oven under the tray with the tofu. By doing this, it crisps the tofu without the use of oil! Bake the tofu until golden and crispy.

Add on top of dinner dishes, eat as is or add to salads. Enjoy!
