Banana Cereal with Banana Milk

I'm crazy for bananas! They are the most versatile fruit. You can literally make everything out of them; ice cream, smoothies, chips, cake, muffins, bread, a tonne of different raw desserts and even cereal and milk. 

Today, I'm sharing with you a very simple breakfast that I enjoy when I don't feel like a smoothie. What I love about banana cereal is that is it almost like a 'monomeal' - dependent on what you garnish with on top. 

A 'monomeal' is eating a single-ingredient of fruit as a meal.

Banana Cereal with Banana Milk

Ingredients

6 bananas (leave 1/2 for banana milk), chopped into coins

1 cup almond or other plant-milk (macadamia is the best!)

1 - 2 fresh dates

Toppings: 1 - 2 chopped fresh dates, shredded coconut and coconut sugar, chia seeds

 

Method

To make the banana milk, blend 1/2 a banana, dates and 1 cup of water in an Optimum or high powered blender until frothy. 

Pour over banana coins in a bowl. Top with your desired toppings - keeping in mind the more simple, the better on your digestion. Eat immediately and enjoy!
